A member of the team since 2019, Stephen was formerly Head Chef of the Michelin-starred restaurant at The Cliff House Hotel in Waterford and also furnished his skills at the Michelin three-starred Restaurant De Librije in Holland. With a focus on locally sourced produce, Stephen creates menus that reflect the very best of what Ireland, and more specifically Tipperary, has to offer.
