A graduate of Miralbueno Hospitality School in Zaragoza, Rubén Martín honed his craft under Michelin-starred Chef Carmelo Bosque and culinary innovator Daniel Yranzo at the region’s most respected restaurants. His career simmered to perfection through relentless dedication—equal parts tradition, innovation, and heart.
By age 24, he transformed Bistró Casa & Tinelo into Aragón’s benchmark for zero-kilometer organic cuisine, earning acclaim for dishes that celebrated local terroir. Never one to rest, Martín shares his passion widely:
- TV Personality: Judge/mentor on “La Batalla de las Tapas”
- Educator: Leads workshops and restaurant consultancy
- Health Advocate: Collaborates with ALDEHA (food/sports/healthy habits) and ATADES’ Inclucina Club
Culinary Philosophy:
“My kitchen roots run deep—intense flavors, hyperlocal products (especially my obsession with borraja, Aragón’s humble star green), and a playful twist.”
Current Projects with the Zaragoza’s Grupo Vaquer:
- LA FLOR DE LIS: Elevated Aragonese tavern
- TAJO BAJO: Pilar Square’s modern-meets-traditional hub
- RÚSTICCO (newest): Fire-kissed ancestral flavors, from wood-grilled lamb to ember-roasted vegetables
