John is an award-winning chef with over 20 years’ experience in Michelin-recognised restaurants across Ireland, the UK, and France. He trained under culinary greats like Sean Kinsella, John Burton Race, and Raymond Blanc, and held key roles in renowned kitchens including L’Ortolan, Le Petit Blanc, and The Park Hotel Kenmare.
Former Head Chef at Marlfield House and chef patron of two Bib Gourmand-awarded restaurants, John now leads Donnybrook Fair’s Central Kitchen as Executive Chef. A Lean Six Sigma practitioner, he specializes in innovation, team development, and operational excellence. In 2024, he was named Ambassador of the Year Europe by The Burnt Chef Project for his work promoting mental health in hospitality.
