Each year, the Taste Kitchen plays host to some of the very best chefs from home and away, with plenty of engaging demos and delicious sampling taking place across the four days.

Thursday June 11th: Afternoon Session 12.00pm - 4.30pm
Based in Kinsale, Anna takes inspiration for her tailored menus from the bounty of fantastic producers on the Island of Ireland, cooking consciously and seasonally.
With a hospitality management degree from Shannon college and a Grand Diplomat from Le Cordon Bleu; Anna has a wide range of experience in all things back and front of house.
Anna worked in Ottolenghi , London before returning home to Cork; where she joined the kitchen team at Michelin Bib Gourmand restaurant Goldie.
Anna now owns her own private catering company, Anna Darling Dining.
Eva Pau is the Managing Director of Asia Market, Ireland’s largest Asian supermarket, and the host of Eva Pau’s Asian Kitchen on RTÉ One. From childhood days spent playing in the aisles of her parents’ Asian store to becoming one of Ireland’s most recognisable voices in Asian cuisine, Eva Pau has dedicated her life and career to making Asian cooking exciting and approachable for home cooks.
Since The Happy Pear’s humble beginnings in 2004 in Greystones, County Wicklow, David and Stephen Flynn set out on a mission to inspire people to make their lives better, by eating more veg and having fun.
20 years later, The Happy Pear now consists of that same veg shop, a cafe and bakery in Greystones, over 80 delicious plant based food products (with sold 15 million units sold), 15+ online courses (that over 100k people have taken), a recipe club, 7 cookbooks (sold 500k copies), a 4 acre regenerative organic farm, a coffee roastery, and a social media following of just over 2 million people.

Marcus is a contender for the title of the busiest man in Ireland, embodying a strong belief in following his passions. A professionally trained chef and influential content creator, Marcus has become a trusted voice in Ireland’s food scene, known for his bold, accessible cooking style and ability to spotlight the best of Dublin’s ever-evolving culinary landscape. Through his content and collaborations, he connects audiences to both trending recipes and the city’s standout dining experiences.
Beyond his culinary pursuits, Marcus is one of Ireland’s most recognised DJs, known for his electrifying performances. He regularly tours both domestically and internationally, promoting and hosting some of Ireland’s biggest parties, creating unforgettable experiences for music lovers everywhere.
Holly White embraced a plant-based lifestyle more than a decade ago and it has transformed the way she cooks and lives. Holly chooses nourishing vegan meals every day and is dedicated to helping others do the same.
Ongoing work collaborations include a role as vegan brand ambassador for Compass Ireland elevating plant-based offerings in workplace hospitality and catering, and working alongside head Chef Ed Cooney in Dublin’s five Star Merrion Hotel creating dedicated plant based options.
Whilst currently completing her masters in Applied Culinary Nutrition, Holly leads both online and in-person events that demonstrate how to make delicious, plant-forward meals accessible and enjoyable.

Throughout his career, Gareth has garnered extraordinary culinary achievements including being appointed Head of Euro-Toques Ireland – a nurturing community of like-minded chefs, cooks, producers, and educators that celebrates the best of Ireland’s food and drink, founded by the great Myrtle Allen. Now is the head of the Euro-Toques young chef of the year competition.
A true Dubliner, Forbes Street is where Gareth’s passion in celebrating Irish produce truly comes to life. Forbes Street by Gareth Mullins is an expression of all that’s brilliant in Ireland’s eclectic capital city. Where innovation and imagination meets hospitality and comfort, Forbes Street showcases an ever-evolving menu with the best local produce from land and sea.
Gareth is a SuperValu Brand Ambassador and also has a weekly slot on Newstalks Pat Kenny Show and is frequent chef on The Six O’Clock Show as well as that Gareth is also the co-host of the ‘Podcast Dishing it out’.

Eniola Salami is the founder of Joyof Foods, a Dublin-based food brand bringing authentic West African flavours into the mainstream through modern, convenient formats.
Raised in a Nigerian household, food was central to how Eniola experienced culture, family, and identity. Dishes like jollof rice weren’t just meals, they were moments deeply rooted in tradition. But as life became busier, she saw a growing gap: the food people loved wasn’t keeping up with how people live today.
With a background in Culinary Arts from TU Dublin and experience in food product development roles at companies such as Lir Chocolates and Donnelly Fresh Foods, Eniola combines chef-level expertise with commercial food manufacturing knowledge, enabling her to translate complex, traditional cooking into scalable products without compromising on flavour.
She founded Joyof to solve a clear problem: making traditionally time-intensive West African dishes accessible without compromise. Its flagship Jollof cooking sauces allow consumers to recreate one of West Africa’s most iconic dishes in just 30 minutes, bringing both convenience and cultural authenticity into everyday kitchens.
Eniola has been recognised as one of the Irish Independent’s 30 Under 30 (2025) and 60 Stars to Watch (2026), and her work is part of a broader mission to position West African cuisine as a staple in global food culture, not a niche.
Viktor Silva brings over a decade of culinary expertise to his new fine dining venture. Originally from Brazil, he honed his craft at top-tier establishments, including O Butiá and the State Governor’s Office. Since relocating to Ireland in 2016, Viktor has refined his skills in Michelin-awarded kitchens. A graduate of Culinary Arts in Brazil with additional training in France, he fuses his extensive experience with traditional Brazilian cooking.
With over 20 years of hands-on experience in the hospitality industry, Alex Radu one of the driving forces behind Amai. He began his career in Greece, where he spent five years training and working in bars, restaurants, and nightclubs. In 2012, he moved to Ireland and quickly built notoriety in some of the country’s most respected restaurants, gaining deep expertise in customer service, operations, and leadership. Now, as General Manager and Patron of Amai, Alex brings a unique blend of international flair and local warmth. His mission is simple: create unforgettable experiences for every guest.
Irish TV chef Kwanghi Chan was born in Hong Kong and moved to Buncrana, Co. Donegal at the age of eight. His career has taken him through some of Ireland’s top kitchens, becoming Head Chef at the Michelin-starred Cliff House Hotel in 2011, before moving into a director role at Soder+Ko in 2015.
In 2016, he launched his own range of sauces and condiments, ChanChan, which quickly gained national distribution across major supermarkets and artisan stores. In 2023, the brand was reimagined as East by Kwanghi Chan, reflecting a modern take on Asian flavours.
Kwanghi previously created a number of restaurant concepts, including Bowls by Kwanghi and Bites by Kwanghi, before pivoting the business towards large-scale events and outdoor dining. Today, he operates an award-winning food truck brand, catering festivals and events across Ireland, bringing bold Asian fusion flavours to a wider audience. One of the pioneers of modern Irish–Asian cooking in Ireland
During COVID-19, he developed a successful range of home meal kits, allowing customers to cook alongside his video recipes at home.

John Relihan is a chef, pitmaster, and partner of Pitt Bros BBQ, one of Ireland’s most exciting BBQ brands. Passionate about fire, smoke, and bold flavors, John combines world-class techniques with the finest local Irish ingredients to create dishes that are smoky, rich, and unforgettable.
John’s career spans some of the most respected kitchens in the world. He trained at Jamie Oliver’s Fifteen, honed his BBQ craft at Barbecoa London and St. John’s London, and spent time in America, learning authentic smoking, grilling, and BBQ styles. Beyond restaurants, John has built a reputation for his retail sauces, rubs, and masterclasses Twelve Fires, bringing his skills and creativity to home cooks and chefs alike.
At Taste of Dublin, John will showcase his signature cooked Irish grass-fed beef, fresh chimichurri, and inventive dishes full of flavor and personality. Hands-on, passionate, and always approachable, John’s food is the kind that sticks with you, long after the last bite.

She is the author of several popular cookbooks, including Home Cooking: Simple and Delicious Food for Busy Lives, Comfort Food, and Batch Cooking. Roberto Mungo is a Calabrian born chef, master pastaio (pasta maker), restaurateur, and trained sommelier, with over two decades of experience in the restaurant industry.
His cooking is defined by a thoughtful, ingredient-led approach to Italian cuisine. As the founder of Grano (est. 2018) and A Fianco (est. 2022) in Stoneybatter, Dublin, he has built a strong reputation for fresh, handmade pasta and a deep respect for seasonality.
Alongside his cooking, he curates an all-Italian wine list focused on small, artisanalproducers, many of which he imports directly. At the heart of his work is a focus on grain. Roberto cultivates Senatore Cappelli wheat near his coastal hometown in Calabria in the south of Italy, harvesting and milling it himself using low-intervention, chemical-free methods to produce flour tailored exclusively for his kitchens. This connection from field to plate underpins Grano’s identity, where fresh pasta is made daily and paired with seasonal ingredients sourced from small Italian producers and trusted Irish suppliers.
Entrepreneur, chocolatier and founder of Grá Chocolates, Gráinne Mullins is a pastry chef with over 10 years experience in high level, fine dining establishments.
In 2019 she was awarded Euro-toques Young Chef of the Year and more recently, was included in the prestigious Forbes ‘30 under 30’ list 2023, highlighting the brightest young entrepreneurs, leaders and stars.
Gráinne now has a combined social following of over 40,000 and has worked on a number of high profile campaigns including Avonmore Professional for which Gráinne is a Brand Ambassador.
Gráinne began Grá Chocolates in July 2020 from a 10 sqm shed in her parents garden built by her Dad during the pandemic. Starting out as a lockdown business and with herself as the sole employee, appetite grew quickly for Gráinne’s sweetly sophisticated treats and Grá Chocolates has now grown to a team of 18, hiring a further 10 employees during the busy Christmas season.
In August of 2022, Grá Chocolates moved into its new premises, a 305 sqm building just outside the city centre of Galway that now houses the production of the chocolates, 30 times the size of the company’s original tiny base. With a passion for chocolate and a commitment to craftsmanship, Grá Chocolates specialises in hand painted chocolates made with the finest ingredients in the heart of Galway.

Lily Ramirez-Foran is the founder of Ireland’s Mexican boutique grocer and cookery school, Picado Mexican in Dublin and author of the award winning book, TACOS by Blasta Books. She has been living and cooking in Ireland for over 20 years with her Irish husband and business partner, Alan. She’s a woman on a mission to showcase Mexican food and culture beyond its clichés and misconceptions. When not busy with work, Lily can be found in her kitchen experimenting with recipes, writing on her kitchen table and learning to grow food in her tiny urban garden. Shop keeper, food writer, storyteller, mad dreamer and lover of all things Irish. She is a chef member of Euro-Toques Ireland, a member of the Irish Food Writers’ Guild and she passionately believes in the Slow Food ethos of good, clean and fair food. Lily is a regular face on Irish morning TV and a frequent radio contributor.
Eunice Power is a well-known figure on the Irish food scene and familiar to viewers of RTÉ’s Today Show, where she cooks live with Maura and Daithí. Raised on a traditional farm in Dungarvan, she is the owner of the award-winning andchips takeaway, and she also runs a bespoke catering business that has catered for some of the country’s most exclusive events and venues over twenty-five years.
Sebastian Skillings is a fishmonger, cook and author based in Dublin. Originally from London, he spent many years working in hospitality before moving to Dublin and becoming a fishmonger. Talking to customers and inspiring them to cook seafood was the inspiration for writing his debut cookbook ‘The Hungry Fishmonger’ which was published in May of 2025.
Sebastian also creates seafood content for his popular Instagram account @thehungryfishmonger which was awarded ‘Best Instagram & Tik Tok account’ by the Irish Food Writing Awards while The independent included him in the 2025 ‘Ones to watch list’. Sebastian hosts regular pop ups and supper clubs around Dublin.

Mark Moriarty is an award-winning Irish chef, celebrated for his innovative approach to cooking. He is also a renowned TV host, author, columnist for The Irish Times, and ambassador for M&S Food Ireland. Mark has a passion for using local, seasonal ingredients and a commitment to food education.
Holly White has been working as a broadcaster and journalist for over a decade here in Ireland.
This fun event will see two personalities go head to head in a live cook-off on the M&S Food Chef’s Kitchen. Participants will be guided by well-known TV chef Edward Hayden, who will be on hand to oversee the creation of their culinary masterpieces. As one of Ireland’s most well-known and liked tv cooks and broadcasters each week, Aisling educates, empowers and excites us to create nourishing and wholesome modern dishes.
In its simplest form, Aisling’s food philosophy stems from her heritage and upbringing, but it has a modern and accessible approach. Her modern lifestyle food is all about seasonal and local ingredients, simple culinary techniques and great flavour.
Kwanghi was born in Hong Kong and raised in Buncrana Co.Donegal and from the age of 8, he was helping out in the family restaurant kitchen.
His latest Venture added to his empire is Bites By Kwanghi a street food concept that won him the 2021 RTE Player battle of the food trucks televised competition. Now, in 2022 he has a 100 seater restaurant & Bites on the go, in 2 locations in Dublin City Centre.
Eric Matthews has over 17 years experience working in Michelin starred restaurants around the globe and has trained under some of the best chefs in Ireland and internationally, including Heston Blumenthal, Philip Howard and Guillame Brahimi. Previously, Eric was the head chef of Michelin starred Chapter One in Dublin for six years.

Graham Herterich, aka The Cupcake Bloke, is well known for creating tasty Bakes with conventional and some very unsual flavour combinations, using traditional Irish recipes as inspiration.
Self-taught chef Ramon Accensi Sànchez’s passion for cooking led him from a degree in Business Sciences to the vibrant kitchens of La Ràpita, Varadero, Miami, L’Espurna, Gami, and Kema. Currently, he serves as the Executive Chef at the Gami and Kema Restaurants in Cambrils, infusing his dishes with creativity and expertise.

A chef with 14 years of experience, he studied for 3 years in one of the most renowned culinary regions of the world: the Basque Country. Now in Gran Canaria he finally fulfilled his dream of merging a traditional Spanish bar with a first-class gastronomic offer where he can now project all his knowledge and use the best products that the island provides.

Cornwall-born chef Jordan Bailey, formerly head chef at Aimsir, the fastest ever straight to two-star restaurant in the history of the Michelin Guide Great Britain and Ireland, which he ran with his wife and General Manager Majken Bech Bailey.
Jordan and his wife Majken, bring a concentrated level of experience from working at a very high level in Scandinavia, a part of the world that cherishes the hyper-seasonal and values the local larder.
Local from Lanzarote, in Canary Island, his personality is reflected in his cuisine, passionate advocate of local products, bold, and creative. He attempts to combine the native flavours of his island with the experience from his travels.

Jeeny Maltese is a Latin-American born TV chef and food writer. Regularly Featuring as a celebrity chef on RTE One, on the “Today Show with Maura & Daithi” and Virgin Media One on “The Six O’Clock Show”.
She is passionate about all aspects of food and her very own recipes make cooking accessible and approachable for everyone.
Niall’s culinary talent is a fusion of his multicultural experiences across various countries. His approach is refreshingly simple, yet flavorful and elegantly presented. He avoids unnecessary embellishments, staying true to the essence of his business. Whether serving local patrons, islanders, mainland Spaniards, or international tourists, Niall aims to provide an authentic, homely dining experience.

Lizzy Lyons from Listowel, Co Kerry is a noted advocate for healthy eating. A former catering manager at Universal Music in London, Lizzy always wanted to work in hospitality and her passion for cooking began at an early age. While friends were counting their confirmation money, Lizzy was investing in a Kenwood mixer!
Adrian Martin is an Irish chef brought up in County Cavan, Ireland. He trained in some of Ireland’s most renowned restaurants including MacNean House (where he worked for six years) and Michelin Star restaurant, Bon Appetit in Malahide where he was head of Pastry.
Trisha loved her job as a chef but as she approached 30 and found herself weighing 27 stone, she knew something had to be done. She set a goal to shed 13 stone, and has already reached halfway with 7.5 stone lost.
Recognising that an ‘all or nothing’ mindset doesn’t serve anyone is key, too. Ultimately, Trisha wants people to know that no matter how bad things get, you can turn them around, reset and start again.
Self-taught chef Ramon Accensi Sànchez’s passion for cooking led him from a degree in Business Sciences to the vibrant kitchens of La Ràpita, Varadero, Miami, L’Espurna, Gami, and Kema. Chimac, is a Korean fried chicken restaurant with two locations in Dublin. Garret and Sofie will be on the M&S Food Chef’s Kitchen stage to demonstrate all things Korean fried chicken!
