Bahay specialises in introducing people to Filipino Flavours created with the very best Irish ingredients. They are known for their ability to bring a familiar “Bahay buzz” with warm hospitality, delicious food and carefully curated dining experiences in the unique spaces they pop up in, where they introduce diners to bold and unique Filipino flavours and fun dishes, that celebrate modern Irish food culture. They are known for dishes such as their Banana Ketchup fried gambas, Longanisa Hot Dawg, beef and Guinness adobo, Filipino BBQ, their longanisa battered sausage with coconut spiced vinegar to name a few. They are just as comfortable banging out delicious street food dishes, as they are offering bold and unique fine dining menus, small plates and critically acclaimed restaurant residencies.

Bahay’s first cookbook Masarap came out in late 2023, to critical acclaim, and was featured in National Geographic Traveller Magazine, on Channel 4’s hugely popular Sunday Brunch, in Olive Magazine, with demos and showcases at Fortnum and Mason, Ballymaloe Cookery School and the mainstage at Taste of Dublin. They have recently received shout outs from industry giants like Nigella Lawson, Sally and John McKenna, Erwan Heussaff of Featr and Fuschia Dunlop, as well as features with The Irish Times, Image Magazine, All The Food, RTE and Irish Country Living Magazine. They were named in Condé Nast Magazine in their list of “2024’s Hottest Chefs”, as well as Ones to Watch in Food&Wine Magazine for 2023 and the Irish Independent’s “Best of 2023”. Their foodtruck is regularly featured in lists of Ireland’s best, and their 2024 calendar is jam packed with popups and experiences across Ireland and the UK. This will be Bahay’s fourth year at Taste of Dubin, and they are excited to bring a whole new menu to a whole new Taste of Dublin for 2024.
