Thursday June 12th: Afternoon Session 12.00pm - 4.30pm

Born and raised on the volcanic island of Lanzarote (Canary Islands), Yeray Gil has forged a culinary identity as striking as his homeland’s dramatic landscapes. As Head Chef of Primario Gastrobar, he masterfully translates his island’s soul into contemporary gastronomy—where tradition meets audacious creativity.

Gil’s journey began with five intensive years in London’s fine dining scene, where he honed his technical precision while nurturing an unwavering commitment to terroir-driven cuisine. This duality—global technique and hyperlocal philosophy—defines his work. A proud member of Lanzarote Cuisine, he champions the island’s unique ingredients: from wind-cured cheeses and picon volcanic potatoes to the pristine seafood harvested along Lanzarote’s southern coasts.

At Primario Gastrobar, Yeray’s tasting menus feel like a love letter to Lanzarote—think “wrinkled potatoes” reinvented with mojo sauces infused with Asian aromatics, or local octopus paired with foraged coastal herbs in modernist textures. For Yeray, sustainability isn’t a trend—it’s ancestral logic. He collaborates directly with small-scale fishermen, organic vineyards, and volcanic salt harvesters, ensuring every bite carries Lanzarote’s essence.

A culinary force from his teens, Óscar Dayas began commanding Las Palmas’ most innovative kitchens (“Mestizo,” “Nautilo,” “Monóculo”) before most chefs complete their training. His relentless pursuit of excellence took him to Michelin-starred LÚ Cocina y Alma in Jerez, where he refined his technique under Spain’s elite.

In 2019, Dayas channeled this vast experience into MAR Gastrotasca– his love letter to Gran Canaria’s shores. That same year, his boundary-pushing seafood concepts earned him the Acqua Panna Award at San Pellegrino’s Young Chef competition (the “Junior World Championship” of gastronomy).

A Trailblazing recognition as he was named among FORBES’ 30 Under 30 (Art & Culture) as one of Europe’s most influential young tastemakers in Europe.

With 14 years of professional experience, Chef Alejandro Mederos honed his craft in one of the world’s most revered culinary regions: Spain’s Basque Country. After three formative years mastering precision techniques and flavor alchemy, he returned to his native Gran Canaria, where he refined his skills alongside the island’s top culinary talents.

In 2020, Alejandro realized his lifelong dream and Anteo was born after extensive reflection and the pursuit of a distinctive identity. It strikes a perfect balance between casual street-style dining and uncompromising quality at its core—creating a gastronomic sanctuary where guests can indulge in the ultimate culinary tribute.

Through his cuisine, Chef Alejandro aims to convey authenticity, joy, and creativity rooted in tradition. It’s his way of sharing everything he has learned throughout his professional journey and lived experiences. The fundamental idea is to maximize the incredible products our islands provide, then play with recipes from around the world.

A testament to resilience:“After nearly a year of renovations, we finally opened our restaurant to the public – only for COVID to force us into lockdown just six weeks later. Through all the uncertainty and nerves, not knowing what would become of us, we’re proud to say that five years later, we’re still here… and now recommended by the Repsol Guide.”
