Winter, 2012. Rural Ireland was reeling from the seemingly endless recession, and publicans were closing their doors in droves – some for the season, many for good. Little surprise then, that Dingle Distillery officially opening was a glimmer of hope and opportunity in an otherwise turbulent time. Nestled between the world-renowned town of Dingle and the stunning Slea Head Drive, Dingle Distillery is proud to call this corner of the world its home. The idea – originally conceived by the late Oliver Hughes, Liam LaHart and Peter Mosley – was to bring the art of distillation to a picturesque place that reflected the characteristics they envisioned their whiskey embodying.
The distillery has come a long way since the winter of 2012, releasing a range of applauded Single Malt and Single Pot Still Irish Whiskeys, and distilling several other multiple award-winning spirits including Dingle Gin – the official ‘World’s Best Gin’ – and quintuple-distilled Dingle Vodka. Dingle Distillery is proudly located at the edge of the scenic town of Dingle, Co. Kerry, Ireland. Dingle is famous for its hospitality, beautiful harbour, amazing local produce and the striking seascapes and landscapes that surround the town.
Dingle Whiskey is a product of its environment. From the localised well water, which comes from a sustainable well 240 feet directly below the distillery, to the immensely manual mashing, alongside the wooden fermentation vessels that feed into the three bespoke copper pot stills, the production is purely Dingle. The microclimate then creates a maturation like no other. Dingle Whiskey is distilled, matured, and bottled at Dingle Distillery.
