Sergi Palacin, after studying at the Cambrils Hospitality School and going through El Bulli
(2009), grew up and shared the world with Gaggan Anand (Gaggan Restaurant), with whom,
from the R&D department, in five years they placed the Indian restaurant at number 1 of The
50 Best Restaurants in Asia (for 4 years) and at number 10 worldwide.
Upon his return, Palacín joined the El Bulli Foundation to develop, among other things, the
“sapiens” project on snacks, combining his work as head chef at Montbar, Barcelona.
He opens The Alchemix in Barcelona, his first project as owner, uniting flavours and freely
expressing all the acquired baggage on a plate.

In 2023, he opens his most ambitious project, in Cambrils, the HIU restaurant, a restaurant
with an exposed kitchen incorporated into the room, with a creative-style kitchen that
defends the values of sustainability.
